The precise amount is determined by the quality of the Stardew Valley starfruit. It can also grant anything from 56 to 146 health points. It all depends on the quality.
If you wish to sell the fruit, you could expect to receive between 750 and 1500 gold coins. Your selling price will be greater if you choose the Tiller profession (between 825 and 1650 gold coins). Isn’t that good?
